Kochen Sie den Spargel in Salzwasser bissfest und nehmen die St\u00fccke aus dem Wasser. Heben Sie den Spargelfond auf. Schrecken Sie danach den Spargel mit kaltem Wasser in einem Sieb ab.<\/li>\n<li>Den gekochten Spargel schneiden Sie in mundgerechte St\u00fccke. Die gew\u00fcrfelte Zwiebel d\u00fcnsten Sie in Oliven\u00f6l an, f\u00fcgen den Risottoreis zu, lassen ihn glasig werden und l\u00f6schen ihn mit dem Wei\u00dfwein ab. mit dem Spargelfond auf.<\/li>\n<li>Wenn der Wei\u00dfwein fast vollst\u00e4ndig verdunstet ist, gie\u00dfen Sie etwa die H\u00e4lfte des Spargelfonds an.<\/li>\n<li>Geben Sie den Rest der Fl\u00fcssigkeit unter st\u00e4ndigem R\u00fchren nach und nach hinzu, bis der Risotto bissfest und cremig ist.<\/li>\n<li>W\u00fcrzen Sie ihn mit Salz und Pfeffer.
