Acetaia Leonardi Oro Nobile Condimento Balsamico Bianco
Azienda Agricola Leonardi traces its roots to the 18th century. From the second half of the 19th century, the Leonardi family specialised in Aceto Balsamico, made exclusively from the fruit of its own vineyards. Across 10 hectares, Trebbiano di Modena and Lambrusco grapes are grown; their must forms part of the Oro Nobile balsamic production. Oro Nobile is Acetaia Leonardi's bestseller, valued for its fruity note and soft, almost creamy texture. The name Oro Nobile means ‘noble gold’, a reference to its colour. This white balsamic condiment from Modena in Emilia-Romagna has a distinctive mild, fruity sweet-and-sour profile (aroma agrodolce). It is made from white Trebbiano grape must from Leonardi's vineyards and the estate's own white wine vinegar. It matures for around four years in oak casks in the well-ventilated rooms of the acetaia, then is bottled unfiltered. Its amber-gold colour comes from its time in wood.

It is particularly suited to finishing raw or cooked vegetables, meat and fish dishes and their sauces, mild cheeses, desserts and fruit. Its golden colour does not darken food; instead, it adds a mild, fruity aroma and well-integrated acidity. It is especially good with tomatoes, mozzarella and basil, and also works with aperitifs, salads, vegetables, sauces, fish, chicken, turkey and fruit salad.
